Cee Dub's Dutch Oven Cooking Summer ClinicDAY 1 – 12:00 Noon –7:00 pm

Orientation: After getting un-packed and moved in, we’ll have a get acquainted session and discuss each individual’s goals and expectations of the clinic. Participants will each cure/season their new Dutch oven for use during the clinic and plan menu items for Friday. Other topics to be covered will include camp sanitation, food safety, food storage while in camp, and designing a camp kitchen. Cee Dub will prepare the evening meal and demonstrate techniques to be covered during the course of the clinic.

DAY 2 – Morning Session 8:00 am – 12:00 Noon

After a breakfast prepared by participants, Cee Dub will present an introduction to cooking with sourdough and baking bread in Dutch ovens. The introduction will include a brief history of sourdough, additional source materials, a sourdough starter for each participant, and Dutch oven baking techniques. Lunch 12:00 – 1:00 pm.

- Afternoon Session 3:00 pm – 7:00 pm

Participants will bake various breads in Dutch ovens, and plan and prepare the Dutch oven dinner. Plan a camp menu for the next day’s field trip, and organize the necessary gear.

DAY 3 - 7:30 am – 9:00 am

Breakfast will be prepared by the students.

After breakfast we’ll load equipment and travel to Grangeville to purchase groceries for the day. We'll either take a drive to Pittsburg Landing on the Snake River in Hells Canyon where there are various historical and archeological sites to visit, and the opportunity to fish for a couple of hours. Or, depending on the temperatures, we'll head up into the mountains to the Gospels where we'll enjoy cool temperatures, lots of shade and plenty of sites and sounds!

DAY 4 - 8:00 am – 12:00 Noon

Participants will prepare Sunday brunch. After the meal, a final review of the clinic will be done, and students will be asked to critique the clinic as well as offer suggestions to improve future clinics.
